At the Cape's signature restaurant, Olvera
promises a celebration of Pacific Rim
traditions—taking inspiration from his
native Mexico, as well as Peru, Japan and
beyond—all while maintaining a distinct
Baja sensibility with a commitment to local
sourcing. Guests to Manta will arrive at a
114-seat dining destination where they can
ogle the edible magic going on behind the
scenes via the exhibition kitchen and indulge
in a menu celebrating Pacific Rim flavors
and techniques. e behemoth, hand-carved
wooden doors that mark Manta's entrance
will open to a seductively lit corridor and
wine wall before leading guests to a main
dining room where natural elements including
wood, dark stone, and leather abound. An
intimate private dining room with fireplace
will seat 20 guests in elegant exclusivity
while an expansive outdoor terrace offers
ocean-side dining. As head of the resorts
dining program, Olvera has added his golden
touch to other space at e Cape including
an indoor/outdoor lobby bar designed as a
sunken, mid-century modern lounge space, a
casual beach restaurant named Ledge where
guests can breakfast or lunch with distinction,
the Glass Box lounge for savory small plates
and cocktails and e Rooftop, a bar where
cocktails served alongside flowing fountains
and fire pits against a background of sweeping
views are provided by Cabos San Lucas and
the Sea of Cortez.
